The Associazione Verace Pizza Napoletana has governed its preparation since 1984: 00-grade flour, minimal yeast, a minimum 8-hour fermentation (Via Napoli ferments for 48 hours), and a wood-fired oven burning at 430–480°C. At those temperatures, the pizza cooks in 60–90 seconds — long enough for the crust to puff and char, not long enough to dry out. The dough stays soft inside, with a light cornicione and those characteristic leopard spots from the oven floor.
