Our wood-fired ovens run at 450–480°C, cooking each pizza in 60–90 seconds — hot and fast enough to blister the crust while keeping the centre soft, following the method set out by the AVPN (Associazione Verace Pizza Napoletana, founded 1984).
Traditional Neapolitan Techniques
Every pizza begins with dough fermented for 48 hours, then hand-stretched and topped with Solania San Marzano DOP tomatoes and fior di latte mozzarella — the same ingredients and process used at both Via Napoli locations.
